Ingredients
Almond powder , sugar, egg whites, passion fruit purée, cornstarch, milk chocolate E160a.
Weight of the macaroon: between 16 and 18g.

A good macaroon should be soft and crispy at the same time. It is this contrast that gives the macaron its much sought-after magical flavor. Mixing is just as important as mixing and cooking. Depending on the dosages, the macaroon cracks or becomes dull. The miracle lies in the mastery of a sharp gesture. The raw materials are chosen with great care. Bruno works with natural and seasonal products. By their freshness, they reveal all their aromas.
Special storage conditions: The macaroons are frozen to their optimum quality level to stabilize them and keep them for up to 12 months at -18°C. Once placed in a positive temperature, they regain all their qualities and can be kept for up to 6 days in the refrigerator.
Artisan macaron
The macaroons are entirely made in our workshops in the south of France in Carros, a few kilometers from the city of Nice.
Unique recipes
All recipes are created by Bruno Laffargue. The fillings are neither butter creams nor jams, but a recipe developed by the Chef after several years of work.
Italian meringue
The shells are on an Italian meringue base. Calibration is done by eye, which means that each of our macaroons has its own character! That's the beauty of craftsmanship.
Regulations
Mic Mac carries out clear and precise labeling (particularly in terms of allergens) and only uses dyes of natural origin. We ensure traceability of all our production. From the reception of the raw material, through the manufacture of the products until the delivery. You can consult us at any time if necessary.
The minimum order is 33 pads of 12, i.e. 396 macaroons . You have the possibility to choose as many different flavors as you wish in the same order.
For packaging reasons, our macaron pads can only be ordered according to our standard boxes: 33, 62, 74, 112, 148 or 224 pads.

Your order is shipped the same day if it has been validated before 12 noon . After this time, shipment will be scheduled for the following day. Delivery is 24/48 hours depending on the region of receipt of the goods.
Delivery methods:
The products ordered are delivered by the company Chronofreeze (or Sunday, eves of public holidays and public holidays). Orders destined for the PACA region are delivered directly by the Mic Mac company.
Orders exceeding 112 wafers will be shipped by pallet with the transport company JetFreeze . This carrier has a delivery time of 2 to 3 working days depending on the region of destination. For any questions or requests, please contact us on macaron@micmacpatisserie.com.
